Bacon Eggs and Brie on Sourdough

Part of the what to do with 1.2kg’s of brie series.

 

INGREDIENTS:

  • Double smoked bacon Use the eye of the bacon if you can. (I smoke my own but there’s good bacon available in stores)
  • Eggs
  • Sourdough
  • Butter
  • Brie

Brie Stuffed Burgers – Rissoles

I got a hold of a large 1.2kg wheel of double Brie and so the following month resulted in a variety of Brie related dishes.

 

INGREDIENTS:

  • 1kg Ground Beef
  • 2Tb Dried Oregano
  • 1 Red Capsicum /Bell Pepper diced finely.
  • 1 Onion finely diced
  • 1Tb Garlic powder (Optional)
  • 1 Ts Salt
  • 1Ts Cracked Black Pepper
    ______
  • 200g Double smoked bacon
  • 200g Brie Cheese (Camembert or any other cheese will work too)

 

METHOD:

I smoke my own bacon which meant the bacon was already cooked. If you’re using regular bacon then lightly saute it in a pan to cook it and then drain and allow to cool.

Chilli Pepper Chicken

INGREDIENTS:

1½kg Chicken legs /thighs
2 large onions thickly sliced
1Tb Garlic paste
1Tb Ginger Paste
½Ts Chilli Powder
1Tb Black peppercorns lightly crushed with rolling pin or mortar & pestle (or vodka bottle!)
¼Ts Clove powder
Oil

METHOD:

Heat oil in frying pan and saute onion till translucent.

Add remaining spices and fry together for 2 minutes.

Add chicken and cook till done stirring every 5 minutes. Cook on a low-medium heat to allow chicken to cook through. Cover with lid/alfoil to focus heat and ensure thorough cooking.
